Spinach Stuffed Chicken

What You Need
1. Chicken Breast
2. Ricotta Cheese
3. Hand of Spinach
4. Fresh Basil Leaves
5. Parmesan Cheese
6. Mozzarella Cheese 
7. Side Dish - Mashed Potato 

Preheat oven 375. Cook the spinach using olive oil. Once cooked, mix in with as much ricotta cheese as you want. I usually just eyeball it. Add some fresh basil leaves. Cut chicken breast in half, 3 quarters in, leaving it like a book. Stuff the dip in the middle. Set parchment paper down on baking sheet. Less mess to clean up the better. Carefully put the stuffed chicken breast on the baking sheet and put in oven for 20-25 minutes. Take out and sprinkle the parmesan and mozzarella cheese all over. Set back in the oven for another 5-10 minutes. Make sure the internal temperature is at 165 F. If not cook a bit longer. 

For those who don't know how to make mashed potatoes, it's simple really. Peel a few potatoes and boil until soft. Rinse and drain. Next, mash mash mash! Add salt, pepper, and lots of butter or no butter, and woala! Your mashed potatoes are finished. Easy peasy.

This meal is not only super delicious but it is healthy too! Judah loved it. I had to shred the chicken for him though. Anyways, enjoy!
