Fiesta Tragón

1. Tostitos Chips
2. Plain White Rice
3. Refried Beans
4. Pork Scallopini
5. Mozzarella Cheese
6. Sour Cream
7. Tostitos Salsa
8. Cilantro
9. 1 Clove Garlic
10. White Onion
11. Tomato Roma

To make the rice, follow the directions on the back of the package, rinse very good. After rinse, put in a large pan and fry using olive oil until the rice is brownish.
In a blender, add a quarter of a white onion, five tomatoes, 2 tbl spoons of cilantro, 1 clove garlic, and according to how much you are making, add the water. Add to rice and stir.
Simmer on low for about 20 minutes or until rice is soft and fluffy.

To cook the pork scallopini, I used Adobe All purpose Seasoning, White Wine, and Salt and Pepper. Make sure to cut the pork into small strips before cooking.

For the refried beans, I just bought it in the can. I used Rosarita's No Fat Tradition Refried Beans.

Now Layer them. Rice on bottom, Pork Scallopini in the middle, Refried Beans next, on top add the Mozzarella cheese. I would have put queso fresco instead but I didn't have any. Then Sour Cream on top. Surround with Chips and Salsa. Woala! 

I am calling this dish Fiesta Tragón because It's a dish you could make at a party and It's a lot of food for one person. Tragón mean a person who eats a lot. So there you go! Enjoy!
